The yum carrot cake is my personal favorite you know why?? cause I never liked the other flavored cakes and I used to avoid eating, one day my friend forced me to eat this yum carrot cake and now he stops me to eat it all the time, just to avoid outside calories I tried it making at home and trust me it turns out to be the best cake I ever had .Truly the BEST CARROT CAKE you’ll ever try! So easy to make and as an added bonus, there’s no oil or butter! I know this cake will quickly become a family favorite!

Ingredients

Cake:

One

1.    1 1/4 cups unsweetened applesauce or oil; this is what my Nana used

2.   2 cups granulated sugar

3.   3 eggs room temperature

4.   Two

5.   2 cups all-purpose flour

6.   1 tsp baking soda

7.   1 1/2 tsp baking powder

8.   1/2 tsp salt

9.   1 tsp cinnamon

10.  Three

11.   2 cups grated carrots

12.  1 cup shredded sweetened coconut

13.  1 cup chopped nuts optional

14.  1 tsp vanilla

15.  1 cup Dole crushed pineapple not drained! {use the pineapple in JUICE, not syrup}

16.  Cream Cheese Frosting:

17.  1/2 cup butter softened

18.  8 oz cream cheese softened

19.  1 tsp vanilla

20. 1 lb powdered sugar

Top with toasted pecans or coconut if desired

Instructions

 

Preheat oven to 350 degrees.

Combine #1 ingredient. Add #2 ingredients. Stir in #3 ingredients.

Pour into a lightly greased 9 x 13, two 9-inch pans or three 8-inch pans

Bake for 35-40 minutes for the 9×13 and 9-inch pans and 25-30 minutes for the 8-inch pans. You’re looking for an inserted toothpick to come out clean.

Let cakes cool for 10 minutes in the pan and then remove to a cooling rack and let cool completely.

 

1.    Beat the butter and cream cheese until nice and fluffy. Add in the vanilla and powdered sugar and beat until nice and smooth.

2.   Invert the cake onto a cake plate or stand.

3.   Apply a generous dollop of frosting and spread…

4.   Gently place the second cake on top and continue frosting. Repeat with the third cake if you made three.

 

5.   Refrigerate for an hour before serving for best results.

 

The Suggestion is to serve carrot cake with the sugar dust on top of it, which is simple and delicious at the same time.

 

  1. To check if the cake is done or not just prick a tooth pic into the cake if it comes out clean than your cake is ready to take out from oven.
